Recipe(tried): Thin Crust Pizza

hey, i love super thin crust pizza, and i used to work in a pizza joint, learned good stuff. Randy, sounds like you want lavosh, which is a cracker bread, great stuff, top with cheeses, veggies, meats, whatever...feta or goat with greek olives and sun dried tomatoes and fresh basil, yummy. when i make thin crust pizza, i use my regular pizza dough, mixed in the food processor....i just dump in a tablespoon of yeast, 3 cups flour, 3 tbls olive oil, a bit of salt, ohh 'bout 1/2 tbls i guess, and about a cup of hot water, whirl around, and add a touch more water or flour depending on stickiness, when a smooth ball forms, i put it in a plastic bag for 20 minutes.....now, you notice there is no sugar? sugar feeds the yeast, makes it rise, salt stops the rising, so although it will proof a little, when you roll it thin, place on a cornmeal sprinkled pan,. cover with your favorite toppings and bake in a 425 to 475 degree oven, on the bottom, you will get a super thin crispy crust, but yes hun, it has yeast, just do not proof it, enjoy, pizza, its a really good thing.
