Recipe: Three Corn Casserole

Three Corn Casseerole

1/2 cup butter, softened
1 cup sour cream
1 egg
1 can (16 oz.) whole kernel corn, drained
1 can (16 oz.) cream corn
1 package (9 oz.) corn muffin mix
1 cup grated cheddar cheese
dash of cayenne pepper (optional)

In a large bowl, mix together butter, sour cream, egg and cayenne pepper. Stir in cans of corn and the muffin mix. Spoon into buttered casserole dish. Bake in preheated oven 375 for 45 minutes, Add cheese and stir well. Cook additional 15 minutes or until dish is slightly puffed.
