Recipe(tried): Thursday Night Supper At Our House... Apricot Glazed Chicken, Orange Glazed Pork Chops
Main Dishes - Pork, Ham We have had a WEEK at our house. On New Year's Eve night, our side by side refrigerator "died." Trying to get a repairman on New Year's Day is not something that can be done easily. We had to wait until Tuesday to try and get the darn thing fixed. We have had this refrigerator for almost ten years. It was going to cost about half as much to fix it as a new one costs!
Luckily, we have an old refrigerator in the basement. My husband turned it on and we transferred our food from the upstairs refrigerator to the downstairs refrigerator. Unfortunately, we did have a lot of food that was thawed so we threw it away.
We went refrigerator shopping on Tuesday. There was not ONE refrigerator in five towns like the one that we wanted. So, we had to order one and my husband will have to go and pick it up. What we will do with the old one is anyone's guess.
Our daughter started to school today and her dad has gone to work. I am waiting for the insurance person to come and look to see if our homeowner's insurance will cover the lost refrigerator/freezer. So, I decided to fix a really nice supper for my family.
Tonight we will be having: Crockpot Apricot Glazed Chicken, steamed fresh broccoli, macaroni and cheese (from a box!), sweet tea with lemon, and rolls.
APRICOT GLAZED CHICKEN
1 jar apricot preserves
1 bottle Catalina Dressing
1 envelope onion soup mix
2 T. minced garlic
2 T. Heinz 57 Sauce
1/2 cup Coke
6 frozen boneless skinless chicken breasts (not thawed)
Spray the crockpot with PAM. Mix the prserves, dressing, onion soup mix, garlic, Heniz 57 Sauce, and Coke together. Place the chicken into the crockpot. Pour this sauce over the chicken. Cook on LOW for 6-7 hours.
This version is a little different than the standard Apricot Chicken recipe that I have. I added the Heniz 57 Sauce, the garlic, and Coke to add more flavor to the dish.
The following recipe is one that I told Gina that I would post.
ORANGE GLAZED PORKCHOPS
4 center cut porkchops, rinsed and patted dry
1 cup orange juice
1/2 cup honey
1/2 cup barbecue sauce
2 T. olive oil
1 onion, sliced into rings
Place the olive oil into a skillet and brown the pork chops. In a large bowl, mix the orange juice, honey, and barbecue sauce. Taste. If it tastes too sweet, add a little more orange juice. If it tastes too sour, add a little more honey. Adjust it to your family's taste. Place the pork chops in a 9X13" baking dish. Pour the sauce over the chops and bake at 350 for 30-45 minutes.
Serve the sauce over rice.
ENJOY!
