Jan,
This was one of my favorite desserts while growing up. I had it for the first time at a family celebration which was held at the Toll House in Whitman MA. This was the restaurant which was run by Ruth Wakefield ( of the famous Toll House Cookies / Chocolate Chip Cookies.)
I agree with you about the richness of the dessert, but it is sooo good. I recall my mother sometimes put cut-up candied cherries in the mix also.
I am glad you requested this recipe; it brought back a lot of memories. Have a great Father's Day!
DATE NUT ROLL
1 Box graham crackers (except 4 crackers)
1/2 lb. marshmallows
1 cup heavy cream
1 cup pecans (or walnuts)
1 pkg. seedless dates
Cut marshmallows and nuts into pieces. Place in bowl.
Crush graham crackers into crumbs with a rolling pin and add to bowl.
Using hands to mix, add cream, dates and marshmallows. Mix well.
When well mixed, form into a roll and roll up in waxed paper.
Place in refrigerator for 24 hours to set.
When ready to serve; cut into slices and place a spoonful of whipped cream on top of each slice.
