Recipe: Tropical Salad Bowl with Papaya Seed Dre

Tropical Salad Bowl with Papaya Seed Dressing

This is a fabulous salad - whenever you can get papayas - and for those of you who don't like papayas, like me, make it anyway - you'll love it!

2 heads Romaine Lettuce
1 Head Bibb Lettuce
1 Papaya
Papaya Seed Dressing - see below
1 large avocado

Throw pieces of lettuce in bowl. Peel and slice papaya, removing seeds, retaining 2 Tbsp of seeds for dressing. Prepare dressing. Peel and slice avocado. Add papaya and avocado to greens and toss with salad dressing.

Papaya Seed Dressing

1/2 cup sugar
2 tsp salt
1/2 tsp dry mustard
1/2 cup white vinegar
1/2 cup vegetable oil
1/2 cup chopped onion
2 Tbsp papaya seeds

Place all ingredients except papaya seeds in blender or food processor fitted with metal blade. Blend. Add papaya seeds and blend only until they are size of coarsely ground pepper. Dressing may be refrigerated up to 3 days.
