Recipe: Acini De Pepe Salad

Acini De Pepe Salad

1/2 cup sugar
1 tablespoon flour
1 1/4 teaspoons salt
1 1/4 cups pineapple juice (use what is drained )
1 egg -- beaten
1 1/2 teaspoons lemon juice
1 1/2 quarts water
8 ounces acini de pepe macaroni
1 large can pineapple chunks
2 cans mandarin oranges
1 small can crushed pineapple
1/2 cup miniature marshmallows
1 ounce package Dream Whip -- whipped*

Drain fruits keeping pineapple juice. Combine sugar, flour and 1/4 teaspoon salt. Stir in 1 1/4 cup pineapple juice and egg. Cook over med. heat. Stir until thickened. Add lemon juice and cool to room temperature. Boil water and 1 teaspoon salt and cook macaroni for about 10 min. (Do Not Overcook.) Drain, rinse and cool. Add macaroni to egg mixture and refrigerate overnight. Add fruit, marshmallows and dream whip. Keep in refrigerator. Good for 1 week.

*I use Cool Whip instead of Dream Whip.
