Recipe: Turkey Sandwiches with Cranberry-Orange Relish (serves 2)
SandwichesTURKEY SANDWICHES WITH CRANBERRY-ORANGE RELISH
3 tablespoons commercial cranberry orange relish
2 tablespoons finely chopped celery
1 tablespoon plus 1 teaspoon nonfat mayonnaise
4 (1-ounce) slices cinnamon raisin bread, toasted
6 (1-ounce) slices cooked turkey breast*
Combine relish and celery in a bowl; stir well, and set aside.
Spread 1 teaspoon mayonnaise over each of 4 bread slices. Divide turkey between 2 bread slices. Spoon cranberry mixture over turkey; top with remaining bread.
*Substitute deli-style turkey breast, if desired. Sodium content will be significantly higher.
Makes 2 servings
