Recipe: Wacky Cake (no eggs, milk or butter)

I have a cookbook suggestion: My First Baking Book by Rena Coyle. My kids both enjoyed it.

Also, I have a cake recipe that I first learned to bake with. It was also my daughters first cake. It is just about foolproof, and makes just enough - one 9-inch layer or 12 cupcakes.

WACKY CAKE

1 1/2 cup flour
1 cup sugar
4 tbsp. unsweetened cocoa powder
1 tsp. baking soda
1/4 tsp. salt
1 tbsp. vinegar
1/3 cup oil
1 tsp. vanilla
1 cup cold water

Mix together dry ingredients.

Mix together wet ingredients, and add to dry. Mix well. Pour into greased 9x9-inch baking pan (if you want to turn the cake out, line the pan with wax paper, and grease it). Or pour into 12 greased muffin pan cups.

Bake at 350 degrees F for 25 minutes or until cake or cupcakes test done.

Kids love to decorate. Give them some frosting and a selection of toppings and turn them loose.

Makes 1 (9-inch) layer or 12 cupcakes
