Recipe: Zesty Caesar Dressing

Salads - Salad Dressings

1 clove garlic, smashed
1 tsp. dijon mustard
1/2 tsp. worcestershire
1/4 tsp. salt
freshly ground pepper
2 T. mayonnaise
2 T. lemon juice
1/4 c. olive oil
3 t. parmesan cheese
In a small bowl, beat together the garlic, dijon mustard, worsc., salt and pepper,, mayo, and lemon juice. Whisk in the oil, and continue to beat until the dressing gets thick. Stir in the cheese and pour the dressing over romaine. Add croutons. Toss and serve.

This salad dressing is wonderful on romaine garnished with pumpernickel croutons. This recipe uses mayonnaise instead of raw eggs as a thicking agent eliminating the fear of the use of raw eggs. This is the best caesar ever and the proof is in the eating. Can use low cal or cholsterol free mayo with good results!
