Recipe(tried): Zucchini Bread Recipe For Breadmakers

1/2 cup honey
2 eggs
1/2 cup unsalted butter
1 teaspoon vanilla extracr
1 cup zucchini, finely chopped
1 cup raisins, pecans, or walnuts
(optional)
2 cups unbleached all-purpose flour
1/2 teaspoon cinnamon
1/4 to 1 teaspoon salt to taste
1/2 teaspoon baking soda
1 teaspoon double-acting baking powder
Place the honey and eggs in your bread machine's baking pan and add the butter, cut into small chunks if it's hard, since you are using a sizeable quantity, so that it will blend with the othe other ingredients better. Yhen add the vanilla extract, the chopped zucchini, and the raisins or nuts if desired. Next add the flour. cinnamon, salt, baking soda and baking powder, taking care to sprinkle the last two over the other ingredients rather than spooning them into one spot, so they will be distributed uniformly throughout the dough.
Use a quick bake cycle for this loaf.
