Recipe(tried): Zucchini Relish

Zucchini Relish

12 cup ground zucchini (4 or 5 large)
4 cups ground onions
5 Tbsp. salt (not iodized)
2 1/4 cups white vinegar
4 1/2 cups sugar
1 Tbsp. nutmeg
1 Tbsp. dry mustard
1 Tbsp. turmeric
1 Tbsp. cornstarch
1/2 tsp. pepper
2 tsp. celery salt
1 sweet green pepper, finely chopped
1 sweet red pepper, finely chopped

Put first 3 ingredients into a large bowl and mix well. Let stand overnight (or at least 6 hours); drain. Put into large kettle with remaining ingredients. Bring to a boil; simmer, uncovered, about 30 minutes until desired consistency. Pour into 6-8 hot sterilized jars and seal. Process 10 minutes (boiling water bath).
