Beef and Noodles

Misc.

Okay girls, here it is: I take a chuck roast and brown it well(season it with garlic, salt and lots of fresh ground pepper. Place in crockpot with enough beef stock to cover well. Let cook on med or so about 8-10 hours. You want this to get really tender. When tender, pour broth into large saucepot and add noodles-cook until tender and serve over mashed potatoes. Noodles: Combine 1 beaten egg,2 tablespoons milk, and 1/2 teaspoon salt. Add enough flour to make a stuff dough, about 1 cup. Roll very thin on floured surface:let stand 20 minutes. Roll up loosely; slice 1/4 inch ; unroll, spread out and let dry 2 hours. Drop into boiling soup or boiling salted water or broth and cook uncovered about 10 minutes. Makes 3 cups cookes noodles. Of course you can double or triple this if you need to. I add some of the roast beef to the noodles as I'm cooking them and serve the rest with the meal. As you can see this is not a 30 minute meal but it is worth the wait. Enjoy!
