I use Barbara Kafka's Microwave Gourmet a lot.

I also love all the cookbooks by Susan Branch, especially, Girlfriends Forever, which highlights low-fat (and chocolate!).

Another favorite is Soup and Bread by Crescent Dragonwagon.

Plus anything by the Frugal Gourmet!
