You can take some of those already roasted chickens and make chicken salad. Canned tuna makes tuna salad. The other night it was so hot and humid and heavy, I went to the store and bought three kinds of ice cream and all the toppings for sundaes. The kids were in shock. They kept saying to my husband, "Mommy must really be happy about something to give us ice cream for supper." We washed them down with root beer floats! Then there are always cold cuts, 5 minute rice, or angel hair pasta, only takes a few minutes of boiling on the stove. Splurge a little now on the convenience stuff, and make it up during the winter with spagheti casseroles!
