Recipe(tried): Re: How about some good beef

I often make beef eye round in the microwave. Since different microwaves have different powers - you may have to 'tinker' a bit with the timing -- however, it comes out tender - and by using a 'rub' it has a good look also.

beef round fajitas:

2-1/2 pound beef eye round roast
Spice rub (see below)
1/3 cup red jalapeno jelly
16 flour tortillas - 10 inch
6 to 8 green onions, sliced
2 large tomatoes, chopped, seeded
