Hi, Kathleen! It is HOT everywhere just now, and as I have noted in previous posts, I just can't stand heat. But we all get hungry anyway, so food must be prepared. One thing I like to do is make a large filling salad -- get your favorite greens, peppers, onions, mushrooms etc. and an already roasted chicken from your supermarket. Cool the chicken, cut it into chunks and mix it into a tossed salad along with croutons (I like those flavored with cheese and garlic) some drained pineapple chunks, crumbled bleu cheese and maybe some baco-bits and toss with your favorite dressing -- I use Italian because the bleu cheese is compatible! With crisp rolls, iced tea and chilled melon -- you have a cool meal and didn't turn on the stove!!
