I'm so sorry to hear about you & your husband's ordeal, & upcoming lifestyle changes. I'm very glad he is doing well.
I have been trying to eat healthy for a few years now, due to a family history of heart disease. I wanted to let you know that there are some pretty good tasting choices available now, & more things coming out all the time. A few different companies make alternative "meat products" that are soy based & they actually are very tasty. They have bacon, sausage, hamburger patties, that you can adjust to fairly easily. I often use Morningstar Farm or Boca brand meat alternatives & like them a lot. If you are putting them in a dish, such as soup, chili, or a casserole, with other ingredients & spices, you can't even tell they are not real meat. The burgers also taste good on a bun, & the bacon is very good also. I also like the "Egg Beaters" & other alternative egg products that are out now. I especially like the Egg Beaters that comes with the chopped up vegetables in it. It makes a quick & easy omelet, & I think it tastes a lot like you are using the whole egg instead of just the whites.
Also, the vegetarian board here has lots of good recipes, as does the low-fat board.
It's hard to make the changes at first, & give up what you are used to, but I think you'll be able to find some very good things to make. Good luck.
