Recipe: Corn and Pepper Fritters (Planters Peanut Oil recipe)

CORN AND PEPPER FRITTERS

1 egg
1/2 cup milk
1 (12 ounce) can golden whole kernel corn with sweet peppers, undrained
1 tablespoon Planters Peanut Oil
1 1/2 cups flour, unsifted
1 tablespoon baking powder
1 teaspoon salt
Dash ground black pepper
Planters Peanut Oil (for frying)

Beat egg in large bowl. Stir in milk, corn and 1 tablespoon oil. Add and beat in flour, baking powder, salt and pepper.

Drop by tablespoonfuls into deep or shallow hot (375 degrees F) Planters Peanut Oil. Fry until golden brown, 2 to 3 minutes on each side. Drain on pepper towels.

Serve hot. If desired, serve with syrup.

Makes about 24 fritters
