Maybe you can get your hubby to help with some cooking while you're caring for the baby. My hubby is NOT a cook. When I left the hospital several years ago, I had such a taste for macaroni with meat sauce. Not the frozen TV dinners, and nothing like hospital cuisine! I needed REAL food. DH said, "Well, if I could cook....." I was laid up on the couch, where I could see the kitchen. I talked him through the recipe, and he was like a kid with blue ribbons! The next time he scrambled me some eggs.... and it has become a tradition that every Sunday I prop up my feet and read the newspaper, while he makes the coffee, scrambles eggs, nukes the bacon, and pops in the toast. It's the only thing he cooks without supervision, but who cares----it's good!
Recipes for breakfast casseroles, overnight French toast and frittatas have been posted, and I've been meaning to copy them because they look so GOOOOD! Those recipes might help you when you have company, or for holidays.
Do let us know your due date for the baby. We'll certainly be with you in spirit!
