Okay, Joanie, I have never had or heard of this but I don't know why it wouldn't work. If you decide to use tomato sauce, I would be careful not to add too much since it could make the dough soggy. The other thing you could use would be filo dough, each layer brushed with melted butter, then cut in squares and put in the muffin tins. Are you thinking of serving these for a brunch? I am wondering for which meal your mother served them? Good luck :-)!!
