Ingrid-I use both ways. If I'm in a hurry I use the machine. But I don't think it is as good as made with your hands. We ate some machine made sandwich bread earlier today but right now I have three loaves of Italian bread in the oven that was made by hand. It is so nice when the dough starts to feel silky in your hands.
