re: Soft Pepper Jack cheese - Just a little FYI

Just a quick FYI in regards to the comments about seeking a soft pepper jack. Velveeta makes a wonderful pepper jack cheese block that melts very smooth, rich, creamy just like their original. So try that. It came out about a year ago. It's a white mild processed cheese, very delicious for making all sorts of melted spreads or casseroles that call for pepper jack. Not at all gritty. Have not tried it in the gringo recipe yet but did make it in a twist on a rotel dip and it was wonderful. I love the gringo dip just like the next person, unfortunately I moved away from IL and there are no 54th St restaurants here...yet.
