By a carton of cottage cheese - do you mean 8 oz? or 16 oz? When I put it in something like this I like to buzz it in the blender or processor first to get out those lumps (we have some non-Swedes who don't like cottage cheese too much and if its blended they don't usually realize it!). Also, did you drain the spinach VERY VERY well? I have a feeling that it is one of these - or combo of them. For, say, 2 (10 oz) pkgs frozen chopped spinach (squeezed very very well) I'd probably only use 1 cup cheese - maybe less - and put a bit of some other cheese - feta? Monterey jack? or something in with it. Of course, it probably would need a different name then! Good luck.
