a really delicious mild fish. Its very flaky so it doesnt lend itself well to grilling (unless you use a grill basket, but even still, the fillets are so thin that its very easy to dry it out using that cooking method). I usually bake or broil this, as it doesnt fry well either. But its great baked and a very good choice for those border-line fish likers, no bones and extremely non-"fishy".

Tonite I think I'll make a lemon-rosemary seasoned breadcrumb topping for it and put it under the broiler, serve it with some wild rice pilaf, and steam some fresh broccoli.
