yup! that's it (pandan leaves)

you were very right. pandan leaves aka screwpine leaves can be bought in most asain grocers. if you can get fresh ones, please do so as not only the flavour but also the color is brighter!

get 2-3 (fresh) leaves and grind them with some liquid in a blender and sieve through. squeeze the green juice out to use. if using forzen leaves, you need more. and make sure don'tuse too much liquid. if your dish contains liquid (ie making pandan soy milk) you can simply use the soy milk to replace water while grinding.
ps: yes, the coconut flesh can be frozen, karen. follow the post of coconut use and you will get the techniques of how to suqeezing out the juice.
