Recipe: Fresh Tomato Pie (using bacon, cheese and soft bread crumbs)
Breakfast and BrunchFRESH TOMATO PIE
2 Tbsp. butter
2 large onions, thinly sliced
12 slices bacon, divided
2 cups fresh soft breadcrumbs, divided use
3 to 4 fresh ripe tomatoes, thinly sliced
2 cups grated cheddar cheese
3 eggs
1/2 tsp. salt
1/8 tsp. ground black pepper
Chopped fresh parsley (for garnish)
Preheat oven to 350 degrees F. Butter a 9-inch pie plate.
Melt the 2 tablesppons butter in medium skillet over medium heat. Saute onions for 3 to 5 minutes. Set aside.
Cook 9 slices bacon; drain and crumble. Reserve 3 slices, uncooked.
Place 1 cup bread crumbs in prepared pie plate.
Place ingredients in layers as follows: tomatoes, onions, cheese, and crumbled bacon. Repeat layers until all ingredients are used. The pie will be mounded but cooks down.
Beat eggs well; add salt and pepper. Pour over pie. Sprinkle with remaining 1 cup bread crumbs.
Cook the remaining 3 slices of bacon halfway in the microwave to remove some of the grease before draping them on top of the pie.
Bake at 350 degrees F for 35 to 40 minutes. Garnish with parsley and serve.
