Recipe(tried): Taco Casserole

I also have two kids and not alot of time. Here's a taco casserole that they all enjoy!

Taco Casserole

1 lb ground beef
1 can pinto beans
1 can corn
1 can rotel tomatoes
1 large onion, chopped
1 pkg taco mix
1 pkg Mexican cornbread mix

Fry beef and onions until done. Drain. Add beans, corn, rotel and taco mix. Put into a casserole. Sprinkle with shredded cheese.

Mix cornbread mix according to package directions. Pour over beef mixture.

Bake at 425 for 20-30 minutes. Serve with salsa, sour cream, black olives, etc...

My 19 month old loves this!
