Rasberry Glazed Chicken

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 tbl olive oil
1/2 cup diced red onion
1 tsp dried thyme
4 boneless skinless chicken breast halves
salt and pepper
1/3 cup seedless raspberry preserves
2 tbl balsamic vinegar

In a large skillet, heat oil. Saute' red onion over low heat till tender, about 5-7 min. Rub the thyme, salt and pepper onto the chicken. Place chicken into pan and saute' for 6 min. on each side till golden and cooked through. Remove from pan and keep warm. To same pan, add the preserves and vinegar. Stir constantly till preserves melt. Spoon over chicken and serve.

Chili Cranberry Chicken

Amount Measure Ingredient -- Preparation Method

1/2 cup chili sauce
1/2 cup whole berry cranberry sauce
2 tablespoons orange marmalade
1/8 teaspoon ground allspice
6 boned and skinned chicken breast halves
2 teaspoons oil

Combine the first 4 ingred.; set aside. In large skillet, slowly brown chicken on both sides in oil. Pour reserved chili sauce mixture over chicken. Simmer, uncovered, 8-10 min. or until chicken is cooked and sauce is desired cocsistency. Turn and baste occasionally. Makes about 1 cup sauce.

NOTES : The sauce is goo on rice! You might want to make extra.
