5 in 10 Hearty Ham and Bean Soup

2 cans (15 oz each) cannelloni beans
1 can stewed tomatoes
1 slice (1/4-inch thick; 6-8 ounces) ham
1 can beef broth
2 limes or one lemon

Drain the beans and rinse well under cold running water. Drain again. Coarsely cut up the tomatoes, reserving all the juices. Cut the ham into 1/4 inch dice.

In a non-reactive, medium saucepan combine the beans, tomatoes with their juices, ham and beef broth. Bring to a simmer over medium heat, stirring occasionally. Partially cover and simmer for 5 minutes.

Squeeze the juice from 1 lime (or 1/2 lemon) into the soup. Cut the remaining lime (or 1/2 lemon) into wedges. Serve the soup hot, garnished with the lime (lemon) wedges.
