Hi another aussie here. If you do not want to part cook potatoes, just peel and slice raw. Throw them into a 9x13-inch baking dish, fill for the number of people you are catering for. The next part can be a choice, a bit over a cup (for 6 people) up to 2 cups for a larger group, sour cream BUT cream works just as well. Pour it over the potatoes. Add some milk if you are running a bit short. Top with the diced bacon and diced scallions , then the grated cheese, 1-2 cups also, depending on the group. Bake 350F for about 40 minutes, till the potatoes are tender and it is golden. Best part here is that this can just happily cook away in the oven while the roast is cooking. Great to take to pot luck as it holds heat for ages. Oh a fancy restaurant tip...chop the potatoes into large dice instead of slices. Cooks faster. Reheats well in the microwave next day if any leftovers!
