SAVORY ALBACORE WITH RICE
2 tbsp. butter or margarine
3/4 cup long grain white rice
1/2 cup chopped onion
1/4 tsp. ground black pepper
1 1/2 tsp. dried basil leaves
2 cups chicken broth
1 1/2 cups assorted fresh or frozen vegetables*
1 (12 1/4 oz.) or 2 cans (6 1/8 oz. each) StarKist Solid White Albacore Tuna in spring water, drained and chunked
3/4 cup shredded Cheddar cheese, divided use
Salt and ground black pepper (to taste)
In medium saucepan, melt butter and saute rice and onion, until rice is golden brown.
Stir in black pepper, basil, chicken broth and vegetables; bring to a boil. Cover and simmer for 20 minutes or until rice is tender (not all liquid will be absorbed).
Stir in Albacore and 1/2 cup of the cheese; heat to melt cheese. Season to taste with salt and pepper.
Transfer to serving dish and sprinkle with remaining cheese.
*Suggested vegetables are: peas, corn, sliced carrots, broccoli, sliced zucchini, sliced mushrooms
