Recipe: Apple Kuchen (with custard topping) (Quaker Oats, 1973)

APPLE KUCHEN

FOR THE BASE:
1 1/4 cups sifted all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1/3 cup granulated sugar
1/2 cup butter or margarine
3/4 cup Quaker Oats (quick or old fashioned, uncooked)
2 tablespoons milk
1 egg, beaten
2 1/2 cups pared and sliced cooking apples
1/3 cup firmly packed brown sugar
1/2 teaspoon ground cinnamon
FOR THE CUSTARD:
2 tablespoons granulated sugar
1/2 teaspoon ground nutmeg
1 egg, beaten
1 cup milk

Sift together flour, baking powder, salt and sugar into bowl. Cut in butter until mixture resembles coarse crumbs. Stir in oats. Add milk to beaten egg. Combine with dry ingredients; mix well to form dough.

Pat dough onto bottom and halfway up the sides of an ungreased 9-inch square baking pan. Arrange apple slices over dough.

Combine brown sugar and cinnamon; sprinkle over apples.

Bake in preheated moderate oven (350 F.) 10 minutes.

For custard, add sugar and nutmeg to egg; stir in milk. Pour egg mixture over apples and continue baking about 35 minutes or until custard is firm. Cut and serve warm.

Makes 9 servings
