Recipe: Apricot Bread

Apricot Bread

1 1/2 c. flour
2/3 c. sugar
1/2 c. wheat germ
1 tsp. baking soda
1/4 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. softened butter, cut into pieces
2 eggs
1/2 c. sour cream
1 c. dried apricots, quartered

Preheat oven to 350 degrees.

In a bowl, combine flour, sugar, wheat germ, soda, salt, cinnamon and nutmeg. Blend in butter with a fork.

In a small bowl, mix eggs and sour cream and add to dry ingredients. Stir well. Add apricots and stir gently.

Lightly grease a loaf pan with butter and sprinkle with flour. Pour batter into pan and bake for 1 hour. Let stand 10 to 15 minutes before removing from pan.
