Recipe(tried): Strawberry Nut Bread

Strawberry Nut Bread

This can be made as a bread in a loaf pan, or as a cake in a tube pan.

1 bag (16 oz) frozen whole strawberries, thawed and drained
2 c. sugar
1 1/4 c. vegetable oil
4 eggs
3 c. flour
3 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1 c. chopped walnuts

Heat oven to 350 degrees. Grease and flour angel food cake pan or 2 loaf pans.

Slightly mash strawberries; set aside.

Mix sugar and oil in large bowl. Stir in eggs until well blended. Stir in strawberries until well mixed. Stir in remaining ingredients except nuts until just moistened. Stir in nuts. Pour into pan.

Bake 1 hour and 10 minutes or until toothpick inserted near center comes out clean. Cool 5 minutes. Remove to wire rack. Cool completely before slicing.
