ASIAN ORANGE-CURRY MARINATED CORNISH GAME HENS
4 Cornish game hens, split in half along backbone
Salt and pepper, to taste
FOR THE MARINADE:
1 cup orange juice, freshly squeezed, or orange juice concentrate
1/2 cup soy sauce
1/2 cup brown sugar
3/8 cup rice wine vinegar
3/8 cup dry sherry or rice wine (Shaoxing)
4 tablespoons cilantro, chopped
4 tablespoons curry powder (or to taste)
4 tablespoons fresh ginger, chopped
4 tablespoons green onions, chopped
2 tablespoons garlic, chopped
Zest of 2 oranges
Preheat oven to 450 degrees F.
Combine marinade ingredients and marinate Cornish game hens 2 to 4 hours.
Place hen halves on rack set on baking sheet. Roast until juices run clear when thigh is pierced, about 25 minutes. (You also can roast them on an outdoor grill.) Season with salt and pepper.
Makes 8 servings
