Recipe(tried): Avacado Sandwich, Cheese and Vegetable Sandwich
Sandwiches Avocado Sandwich
Cheddar, Monterey Jack or Swiss Cheese
Avocado, thinly sliced
Red Onion, very thinly sliced
Tomato, sliced
Salt and pepper to taste
Alfalfa sprouts
Cucumber, very thinly sliced or shredded (optional)
Freihofer's Oatmeal, Arnold's Original Branola, or whole wheat bread
I ususally spread each slice of bread with mayonnaise but I think this would be good without any mayonnaise as well. Put a slice of cheese on one slice of bread. Add thinly sliced avocado (you could dip it in lemon juice so it doesn't turn brown), red onion to taste, and alfalfa sprouts. Package the cucumber and tomato separately so the samdwich doesn't get soggy. Your DH can add them when he is ready to eat.
Cheese and Vegetable Sandwich
(very similar idea as the Avocado Sandwich)
Freihofer's Oatmeal, Arnold's Branola, whole wheat bread, 7 or 12 grain bread, or a bagel
Cheese of choice - cheddar, Monterey jack, Muenster, American (One of my daughters used to like Dill Havarti for a change)
Green and/or red bell pepper, thinly sliced
Cucumber, thinly sliced or shredded
Carrot, thinly sliced or shredded
Red onion, thinly sliced
Salt and pepper
Alfalfa sprouts or lettuce
Tomato. thinly sliced
Layer cheese and vegetables on bread. Again, you may wish to package the cucumber and tomato separately so the sandwich doesn't get soggy.
Another thing I didn't mention is vegetarian chili in a wide mouth thermos with corn bread. Also, don't forget any vegetarian dinner leftovers, heated and packed in a thermos.
