Recipe: Baked Blueberry French Toast

Breakfast and Brunch
I made this once for breakfast and everyone really loved it (especially my 2 year old grandson).

BAKED BLUEBERRY FRENCH TOAST

20 slices cubed white bread, crusts removed
1 (8 ounce) package cream cheese, softened
1 1/2 cups fresh or frozen blueberries
18 eggs well beaten
1/2 cup of real maple syrup
3 cups skim milk
1 cup half and half
Real maple syrup and cooked spicy sausage (for serving)

Grease a 12x18-inch or (2) 9x13-inch pans well. Scatter 2/3 of the bread in pan. Pinch off 1/2-inch bits of cream cheese and scatter on top. Scatter all blueberries over and top with remaining bread.*

Mix well beaten eggs, maple syrup, skim milk and half & half. Take the egg mixture and pour over bread. Mash bread down slightly with spatula. Cover and refrigerate over night.

Bake, uncovered, in a 325 degree F oven for 1 hour and 20 minutes or until lightly browned. (Can be broiled briefly to enhance browning.)

Serve with real maple syrup and spicy sausage.

Serves: 12

*I sprinkle some cinnamon over the bread before adding the eggs.
