I have,t posted much in the last week as I,ve been attending a local show to display our products so it was all go and sore feet!!!!!!Well its over now and was a great success I did,t cook for 3 days (my family lived on pizzas,burgers and bacon and egg sandwiches!!!!)Is,t it funny when Mum,s not about (and bearing in mind the freezer was full!)how everyone just uses the microwave(to heat things up in!)or the local take away.Well I decided they have,t seen any veggies for days so I think it,ll be veggie and fruit galore week!Here is Last nights Supper.....Baked Hake Loaf

Serves:6
1lb and 4 ozs hake fillets, poached and flaked(any white fish will do Preferably the softer types)
1 cup breadcrumbs, buttered (lightly fry fresh breadcrumbs in melted butter)
3 eggs, beaten
1/2 cup milk
1 tsp lemon juice
1 Tbls onion, finely chopped
1 Tbls parsley, finely chopped
1 Tbls melted butter
salt and freshly ground black pepper
Tarter sauce

1 cup mayonnaise
1 tsp capers, chopped
1 tspgherkins, chopped
1 tsp freshly chopped parsley
1 tsp tarragon, chopped
1 egg, hard boiled, finely chopped
1 Tbls onion, finely chopped, blanched in boiling water and refreshed under the tap.
Combine fish, breadcrumbs, eggs, milk, lemon juice, onion, parsley and melted butter in a bowl.Season with salt and pepper to taste.Pack into a well-buttered loaf tin.Cover with foil and bake at 180 C for 50-60 minutes.Turn out onto a flat plate and serve with the tartare sauce.
Tartar Sauce
Combine all ingredients and chop in the processor.Place in in the refrigerator to chill.
With it we had steamed baby potatoe,s and .........CITRUS SALAD

2-3 large juicy grapefruit
1 crisp green apple
juice of 1/2 lemon
1 ripe avocado
1 onion
well-chilled mixed salad leaves of choice(I used a head eachof butter lettuce, crisp cos and a red frissee,it looked really pretty!)
1-2 tsp capers
2 tbsp lightly toasted sunflower seeds
1/2 cup of sultanas(golden raisins)
DRESSING
********
juice of grapefruit
2 tbsp red wine vinegar
2 tbsp olive oil
salt and milled black pepper
(Serves 4-6)
Segment grapefruit with a sharp, serrated knife and lift out segments from between membranes, reserving shells to squeeze out juice for dressing.
Quarter apple, slice thinly and stack slices, then slice them lengthways. Squeeze over a little lemon juice.
Slice avocado into long strips.
Halve onion, place flat side down on a board and slice very thinly across.
Layer grapefruit, apples,sultanas, avocado, onion and salad leaves on large plates, then top with capers and sunflower seeds.
Squeeze grapefruit shells over salad, sprinkle with vinegar, olive oil, salt and milled black pepper to taste.
Dessert was......Strawberry ice-cream I think I might have posted this before but here we go again...
STRAWBERRY ICE-CREAM
*************************
2 punnets = 1 cups mashed strawberries.
1 cup hot water
cup sugar
1 freshly squeezed orange
1 freshly squeezed lemonMix altogether, put in mould to freeze.
Once frozen turn out on platter, fan strawberries on either side with decoration.
