Recipe: Celery Sticks with Whipped Brie

CELERY STICKS WITH WHIPPED BRIE

4 to 6 ounces brie, at room temperature
1/4 cup (4 tablespoons) unsalted butter, softened at room temperature
16 to 20 celery sticks about 4 to 6 inches in length*
2 to 3 tablespoons finely chopped fresh Italian parsley (for garnish)

Remove rind from cheese and whip with the butter in a medium-size bowl until light and creamy. Spoon mixture into a self-sealing plastic bag with a hole cut in the tip.

Pipe cheese mixture into celery sticks. Dip one end into chopped parsley. Serve.

*To prevent sticks from wiggling while piping cheese mixture into them, you can shave a flat surface on underside with paring knife.
