Recipe: Blintz Bake

I have never made these but want to. They sound yummy!

Blintz Bake

1 lb. ricotta cheese
2 (8 oz) pkg. cream cheese, softened
2 eggs
1/4 cup sugar
2 tsp lemon zest
3 Tbs fresh lemon juice
1 cup flour
1 tbs baking powder
1/2 cup sugar
1 cup butter melted
3 eggs
1/4 cup milk

Beat 1st 6 ingredients together until smooth. Reserve. Combine flour, baking powder & sugar in large bowl. Add in the butter, eggs & milk and whisk until smooth. Spread 1/3 of batter into greased 9x13 baking pan. Spoon cream cheese mixture evenly over batter. Gently spread remaining batter over top. Bake at 300 for 1 1/2 hours or until set. Cut into squares & dust with icing sugar. Serve with whipping cream & fruit topping or jam.
