Recipe: Braised Watercress

BRAISED WATERCRESS

1/4 cup sliced green onions
1 tablespoon margarine
2 tablespoons water
2 bunches watercress (about 4 cups), thoroughly rinsed, tough stems removed
1/8 teaspoon salt
Dash of pepper

In large skillet saute onions in margarine until tender.

Add water and watercress; Cover and Cook 3 to 4 minutes or until watercress is just tender. (Do not overcook.) Stir in salt and pepper.

TO COOK IN MICROWAVE OVEN:
Cook onions and margarine in covered 3-quart casserole on high 2 minutes or until crisp-tender. Omit water. Add watercress salt and pepper; cook 4 to 6 minutes stirring once.

Makes 4 servings
