BRAN BROWNIES
These brownies are fudgy, gooey and delicious. Your family and friends will never believe they are free of fat and cholesterol. To reduce fat even more substitute raisins for the nuts, or leave the nuts out.
2 very ripe bananas, mashed
3 Tbsp. cocoa
1 Tbsp. instant coffee
1 Tbsp. water
2 cups sugar (less if you prefer)
6 egg whites
1 tsp. vanilla
1 cup oat-bran cereal*
1/4 tsp. salt (optional)
1 cup chopped nuts (optional)
Preheat oven to 350 degrees F. Grease and floured a 9-inch square baking pan.
Combine the bananas, cocoa, coffee, and water. Mix in a large bowl with a hand mixer.
Add sugar, egg whites, vanilla; mix well.
Stir together oat bran cereal and salt. Then add to the banana mixture. Fold in the nuts. Pour into prepared pan.
Bake at 350 degrees F for about 45 minutes. Cut into individual squares, cool and serve.
*Any fine oat bran will do. I used Quaker Hot Oat Bran cereal, something that would be quick cooking.
Yield: 3-4 dozen
