GUILT-FREE GRAVY
3 tablespoons Argo Corn Starch
1/4 cup apple cider*
2 cups defatted turkey stock or fat-free broth
1/2 teaspoon rubbed sage
In a small bowl, combine the Argo Corn Starch and apple cider until smooth. Set aside.
Remove all fat drippings from the roasting pan. Stir in the stock or broth. Cook over medium heat, stirring to loosen the browned bits. Remove from heat
With a whisk, stir the corn starch mixture into the pan. Add the sage. Stirring constantly with a whisk, bring to a boil over medium heat and boil 1 minute until thickened. If desired, season with salt and pepper to taste.
*Water can be substituted for apple cider.
TO MAKE IN THE MICROWAVE:
Combine corn starch, apply cider vinegar, turkey stock and sage in a 2-quart, microwave-safe bowl. With a whisk, stir mixture until corn starch is completely dissolved. Microwave on High power for 7 to 9 minutes or until mixture boils, stirring every minute. Boil for 1 minute. Season with salt and pepper.
Yield: 2 cups
