Recipe: Cabbage and Apples

Cabbage and Apples

Yield: 4 servings

2 tbsp salad oil
1 onion; coarsely chopped
1/4 cup cider vinegar
2 tbsp brown sugar
1/2 tsp salt
1/2 tsp pepper
2 tart green apples; cored and thinly sliced
1 small head red cabbage; coarsely chopped

Heat oil in a large skillet. Add onion and cook until softened, about 5 minutes. Add vinegar, sugar and salt and pepper to taste; stir to mix over moderate heat. Add apple and cabbage, bring to a boil, reduce heat to medium. Cover and let simmer until cabbage wilts, about 10 minutes. Stir occasionally to coat cabbage with sweet-sour mixture.
