We make a very simple recipe. No marshmallows PLEASE,
Scrub or peel sweet potatoes and slice into 1/2" rounds. Place in a skillet that will allow all the slices to be flat in the pan. cover with water and bring to a boil, lower heat and simmer until 3/4 done. These do not have to be turned. drain off most of the water. Add about 1 1/4 cup dark brown sugar and 4 Tablespoons butter. Cook on low heat, making sure it does not burn or get too stiff to coat a spoon.
Keep the pan covered, If it is getting to thick, add just a drop or 2 of water to thin. This is a thick caramel sauce. It took me a while to get this "just like Mom's", but if it is thinner, it is still good. If you have left in to much water, remove potatoes to serving dish and cook the sauce down. It is a candy sauce , so be careful not to burn it.
DO NOT MUSH the potatoes by stirring to much, turn them with a spatula and give the pan a few shakes to get everything mixed .yummy. can't wait till Thursday.
