CAROLINA SHRIMP PILAU
3 ounces salt pork or bacon, diced
1/2 cup chopped onion
1 clove garlic, minced
1 (28 ounces) can tomatoes
1 cup Uncle Ben's Converted Brand Rice
1/2 teaspoon salt
1/4 teaspoon mace (optional)
1/8 teaspoon cayenne pepper
1 pound medium-size uncooked shrimp, peeled and deveined
1 cup chopped green pepper
Fry salt pork in 10-inch skillet until brown and crisp; remove and reserve.
Saute onion and garlic in drippings until tender, about 5 minutes.
Chop and drain tomatoes. Add enough water to tomato liquid to measure 2 1/2 cups.
Add rice to skillet; cook and stir over low heat 3 minutes.
Add tomato liquid, tomatoes, reserved salt pork and seasonings to rice mixture. Bring to boil; reduce heat. Cover tightly and simmer 20 minutes.
Stir in shrimp and green pepper. Remove from heat. Let stand covered until all liquid is absorbed, about 5 minutes.
