Recipe: American Indian Dried Fruit and Wild Rice Pilaf (using long grain and wild rice mix)

AMERICAN INDIAN DRIED FRUIT AND WILD RICE PILAF

1/3 cup chopped onion
1/4 cup chopped celery
2 tablespoons butter or margarine
1 (6 ounce) package Uncle Ben's Long Grain and Wild Rice
2 1/2 cups apple juice
1 medium apple, chopped
1/2 cup finely chopped dried apricots
1/3 cup chopped walnuts

Saute onion and celery in butter in a 3-quart saucepan until tender, about 10 minutes.

Add rice, contents of seasoning packet and apple juice. Cover and cook over low heat until all liquid is absorbed, about 25 minutes.

Stir in remaining ingredients; heat thoroughly.

Makes 6 servings
