MINTED CARROTS

The only secret to the minted carrots that make such a good side dish with roast duck, is that FRESH mint must be used. If you're thinking of substituting dried mint or mint extract, just forget the whole thing.

To prepare, peel and slice diagonally 8 large carrots and boil in salted water until just tender. Drain well and add 1/2 cup honey and 8 leaves of crushed mint. Warm over low heat, stirring to coat the vegetables evenly.

CARROT SOUFFLE with CHEESE

1 cup cooked, mashed carrots
2 whole eggs
1/2 cup rolled cracker crumbs
1 cup milk
1 tsp. salt
1/2 tsp. pepper
1 T. sugar
6 T. melted butter
1 cup grated cheese

Mix all ingredients together and bake 45 minutes at 375 degrees.

ZIPPY GLAZED CARROTS

2 T. butter
1/4 cup brown sugar
2 T. prepared mustard
1/4 tsp. salt
3 cups sliced carrots, cooked and drained
1 T. chopped parlsey

Melt butter in skillet. Stir in brown sugar, mustard and salt. Add cooked carrots; heat, stirring constantly, until glazed (about 5 minutes). Sprinkle with parsley. Makes 4 servings.

Apricot-Glazed Carrots

Serving Size : 6

2 pounds carrots -- sliced
1 1/4 teaspoons salt
3 tablespoons butter or margarine
1/3 cup apricot preserves
1/4 teaspoon ground nutmeg
1 teaspoon grated orange rind
2 tablespoons fresh orange juice
fresh Italian parsley -- garnish

Cook carrots and 1 tsp salt in boiling water to cover in a large saucepan 15-20 min. or until tender; drain. Melt butter in saucepan; stir in apricot preserves until blended. Stir in remaining 1/4 salt, nutmeg, orange rind and juice. Add carrots, and toss to coat. Garnish, if desired.

Baked Carrots

18 Carrots, small
1/3 c Butter
1/2 c Sugar
1 ts Salt
1/3 ts Cinnamon
1/3 c Boiling water

Approx. Cook Time: 1:30 Scrape or pare carrots and place in casserole.
Cream butter, sugar, salt and cinnamon together; add water and blend
well. Pour over carrots, cover and bake in moderate 350F oven 1 1/2 hours.

Carrot & Onion Puff

Serves 4

1 c Chopped Onion
2 tb Water
1/2 c Oat bran
12 ts Salt
dash Pepper
1 Clove garlic, minced
1 c Shredded carrots
1 1/2 c Skim milk
2 tb Snipped fresh Parsley
dash Ground Nutmeg
1 c Shredded Cheddar cheese or Monterey Jack cheese
4 Egg Whites

In a large saucepan combine onion, carrots, garlic, and water. Bring to boiling, reduce heat. Cover and simmer about 10 minutes or till vegetables are tender, stirring occasionally. Do not drain. Stir in milk, oat bran, parsley, salt, nutmeg, and pepper. Bring to boiling over medium-hi heat, stirring constantly. Cook and stir for 2 minutes. Remove from heat. Stir in cheese till melted. Cool slightly. In a large mixer bowl beat egg whites till stiff peaks form (tips stand straight). Fold in vegetable mixture. Pour into an ungreased 1 1/2 qt souffle dish. Bake in a 325 deg F oven about 50 minutes or till top is brown and a knife inserted near the center comes out clean. Serve immediately.

Lemon Carrots
Serving Size : 4

1 lb. carrots, peeled and thinly sliced
1/4 cup cilantro or parsley, chopped
1 Tbs. lemon juice
1/2 tsp. lemon zest, grated
1 Tbs. unsalted butter

Place carrots in a steamer basket over boiling water. Cover saucepan and steam 7-8 minutes or until carrots are tender. Transfer carrots to a bowl. Toss with remaining ingredients and pepper to taste.

Carrot-Pecan Casserole

3 pounds carrots -- sliced
2/3 cup sugar
1/2 cup butter or margarine
1/2 cup chopped pecans -- toasted
1/4 cup milk
2 large eggs -- lightly beaten
3 tablespoons flour
1 teaspoon vanilla
1 tablespoon grated orange peel
1/4 teaspoon ground nutmeg

Cook carrots in boiling water to cover in a saucepan 15-20 min or until tender; drain and mash. Stir in sugar and remaining ingreds. Spoon into a lightly greased 11x7" baking dish. Bake at 350 degrees for 40 min.

Lemon Glazed Carrots

1 1/2 pounds med. carrots -- cut in 1/2" slices
3 tablespoons butter or margarine
3 tablespoons brown sugar
3 tablespoons lemon juice
1/4 teaspoon salt
grated lemon peel -- optional

Place carrots in saucepan; cover with water. Bring to a boil; reduce heat. Cover and simmer for 10-12 min. or until crisp-tender. Meanwhile, in a small saucpan,melt butter. Add brown sugar, lemon juice and salt; bring to a boil, stirring constantly. Drain carrots; add butter mixture and toss gently. Garnish with lemon peel if desired.
