CHEDDAR CHEESE TIMBALES
3 tbsp. butter
3 tbsp. finely chopped onion
3 tbsp. flour
1 tsp. dry mustard
1 (16 oz.) can Veg-All Mixed Vegetables
3/4 cup milk
2 cups grated cheddar cheese
2 eggs, slightly beaten
1/2 cup thy bread crumbs
Salt and pepper (to taste)
Melt butter in saucepan; add onion and cook until soft.
Stir in flour and dry mustard. Drain Veg-All and add liquid to milk. Gradually add milk to flour mixture; stir until thickened.
Add cheese; stir until melted.
Slowly add to beaten eggs. Mix in bread crumbs and vegetables. Pour into greased custard cups; place in shallow pan with an inch of hot water.
Bake at 350 degrees F for 30 minutes or until firm.
Makes 6 servings
