Chicken, Corn, and Green Onion Rotini

8 ounces uncooked rotini
2 cups chopped roasted skinless, boneless chicken breast
2 cups fresh corn kernels
1 1/4 cups thinly sliced green onions
1/2 cup (2 ounces) grated fresh Parmesan cheese
2 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil
1/2 teaspoon salt
1 Serrano chile, seeded and minced

Cook pasta according to package directions, omitting salt and fat. Drain pasta; return to pan. Add chicken and remaining ingredients; toss well.

Yield: 6 servings (serving size: 1 1/3 cups). 338 cal, 9.4g fat, 22.7g pro, 42.6g carb, 3.8g fiber, 39mg chol, 1.8mg iron, 637mg sod, 132mg calc.
